Manchego cheese
Manchego is a sheep’s-milk cheese from Castilla-La Mancha, protected by PDO rules. Firm, nutty, and often served as a tapa with quince paste (membrillo) or olive oil.
How it is used
- Tapa plates with membrillo or nuts
- Bocadillos and picnic boards
- Cooking in some baked dishes — more often eaten plain
