Seafood paella
A coastal dry-rice cooked in a paella pan on fish or shellfish stock — prawns, mussels, clams, squid — related to Valencian rice technique, but not the same plate as inland Paella Valenciana.
Menus in English often print “seafood paella” for any yellow rice with prawns. In Spanish kitchens the closer names are arroz de marisco or a house paella de mariscos. It shares a family with Paella Valenciana. It does not share rabbit, garrofó, or a meat-only sofrito. Mixing both in one pan is a hybrid. If you want the inland reference, cook that plate. If you want the port, cook this one.
What belongs in the pan
Stock is the difference you taste first. Shrimp heads, fish bones, or a quick shellfish boil beat a generic chicken cube. The sofrito is still tomato and oil, sometimes onion or ñora, kept short. Rice is Spanish short-grain — bomba is the usual teaching grain because it forgives a little extra liquid.
Proteins should be able to finish in the last minutes: mussels and clams opened on the rice, prawns laid on top, squid cut small so it does not seize into bands. A mountain of mixed frozen seafood dumped in at the start overcooks the delicate pieces and undercooks the rice in the shadows they cast.
Lemon wedges on the side are a serving habit, not a cooking step. Chorizo is not a seafood-paella ingredient; smoked paprika oil from sausage fights the stock.
Method that keeps it dry rice
- Build or warm a shellfish or fish stock. Taste it: it should be savory, not muddy or overly salty before the rice concentrates it.
- In the paella pan, cook a brief tomato sofrito in olive oil. Some cooks sauté squid or prawn shells here for more depth, then lift them.
- Add stock, saffron, salt. When it simmers, rain in rice in a thin even layer. Shake once. Stop stirring.
- Arrange clams and mussels as liquid drops. Add prawns late. You are timing two clocks: rice absorption and seafood doneness.
- Finish for optional socarrat. Rest off heat. Serve from the pan.
If you stir, you get creamy rice. If you use a deep casserole, you get steamed rice. If you lid the pan the whole time, you fight evaporation. Those failures are listed on common paella mistakes.
How it sits next to fideuà and Valenciana
Fideuà is the noodle cousin: often the same seafood logic in a paella pan, toasted noodles instead of rice. Order it when you want the coastal idea without rice. Inland Valenciana is the land protein and bean plate. A tourist “mixta” tries to sell both stories at once; texture usually loses.
